You can learn how to prepare one of GSC First Ladyâs favorite recipes and help a good cause at the same time! Betsy Barr (pictured) says she often prepares âMarinated Chuck Roastâ for her and Glenville State College President Peter Barr as well as their guests. The recipe will be one of many included in a soon-to-be released community cookbook to benefit the Gilmer County Historical Society.
GSC is among the community sponsors of the cookbook, which is a fundraiser for the historical society. The books will go on sale in late April or early May and be sold at several local locations including the GSC Bookstore and the GC Historical Society office at 302 East Main Street in Glenville. Along with the Barrsâ Marinated Chuck Roast recipe, other GSC employees and many local residents submitted their favorite dishes for the publication.

The Barrs' Marinated Chuck Roast
3 lbs. chuck or London Broil
1 tsp. accent (optional)
2 tbsp. soy sauce
2 tbsp. oil
1 tbsp. worcestershire
1/3 cup wine vinegar
1/4 cup catsup
1 tsp. dry mustard
1 tsp. salt
1/4 tsp. pepper
1/4 tsp. garlic salt
Mix ingredients and pour over meat. Marinate overnight. Broil 45 minutes turning once. The recipe can be doubled and also used with chicken. Save marinade, heat, and use for a side.
